Although I don't have celiac, I do have a bunch of food allergies, so I get it! Boy, do I get it! Things have changed a lot in the decades since I discovered what I was allergic to, and it's good to know things are still changing in the right direction.

All these places want to get in on the “gluten free” act, but have no clue how little it takes to contaminate foods in shared kitchens that prepare both gluten free and regular dishes.

Do you cook breaded foods in your deep fryer? If so, your frying oil is contaminated and no longer qualifies as “gluten free” even if the food you’re cooking doesn’t contain wheat.

Do you toast hamburger buns on your grill? Your grill is contaminated and nothing cooked on it is safe for people with severe sensitivity.

A local bakery sells “gluten free” mochi ball pastries, but I quit buying them for my gluten free roommate after I watched an employee restock them with the same gloves they used to handle products containing wheat.

And that’s what this training will do. Less places saying they can do gluten free, but the ones that will you can really trust know what they’re doing

Thanks for keeping up the good work!

Poltics are personal. I'm not Celiac, but I know people who are. I am gluten-free by choice to fight inflammation and for better digestion because the gluten does affect me, but it's not life threatening. It's wonderful to hear that people are taking Celiac training seriously. Thank you!

That's great about the Illinois bill to further protect people with celiac disease. But I'm betting the Republican sponsor has a personal stake in the issue--maybe a child of hers. In my experience Republicans care about such things only when they are personally affected. We saw this 20-ish years ago in Michigan when a Republican lieutenant governor pushed to require health insurers to cover autism treatment. Because of course his son was autistic.
